How long have you been a chef and where did you train?
I have been a Chef for 27 years and of that I have spent 23 years at the Glen-Yr-Afon House Hotel. I originally trained to become a Chef in Nash College, Newport but I do feel that I have been constantly learning throughout my career.
Why did you decide to follow this career path?
From a young age I was always helping my Mother in the kitchen with her baking and from then on I was passionate about cooking. I enjoy being able to create exciting new dishes on a daily basis from ingredients that I may not have considered pairing together, I love getting surprising results.
What makes your restaurant different from others?
Here at Clarkes Restaurant at the Glen-Yr-Afon House Hotel we serve good, honest food. We cannot be considered pretentious or overpriced for the dishes that we provide. We are constantly catering for the customers every need and have a reputation based on our attention to detail whether it is a quiet meal for two, an anniversary, or any special occasion.
Who is your foodie hero?
My foodie hero would be my mother as I remember throughout my childhood her kitchen always smelling divine as she is a great cook and is always baking something.
What do you think about the way food, restaurants and chefs have become 'sexy'?
Sexy? That makes me laugh – a hot environment and a red face - I wouldn’t really say sexy sums up this industry, and the thought of suspenders falling down could be a Health and Safety risk!!
You've got the night off to spend a quiet evening at home and you want something to eat, what would you have?
Night off – me cook? That definitely would be my husband Ian cooking. If I did cook it would be something that doesn’t involve a lot of washing up such as pan fried seabass with salsa and a lemongrass and cumin sauce, followed by a cup of tea and a chunky kitkat.
Why is Monmouthshire such a great place for food?
Monmouthshire is a great place for food as there is a constant supply of raw ingredients available on your doorstep. There are always lots of new and exciting establishments opening up with beautiful surroundings to enjoy your meals.
